* 2 lbs beef sirloin or tenderloin, cut into 1 inch cubes
* 1/2 cup olive oil
* 1 tablespoon white vinegar
* 1 teaspoon cumin
* 1/2 teaspoon coriander
* 1/2 teaspoon paprika
* 1 teaspoon garlic, minced
Procedure:
- 24 hours prior to grilling, prepare marinade by combining olive oil, vinegar, corinader, garlic, cumin, and paprika.
- Pour marinade into freezer bag and add beef cubes. Allow to marinate in the refrigerator until ready to grill.
- Remove from refrigerator and thread meat onto skewers that have been sprayed with cooking oil.
- Spray grill with cooking oil to prevent sticking. Grill for 5-7 minutes on each side or until desired doneness.
Chicken Cordon Bleu
Ingredients:
* 4 skinless, boneless chicken breast halves
* 1/4 teaspoon salt
* 1/8 teaspoon ground black pepper
* 6 slices Swiss cheese
* 4 slices cooked ham
* 1/2 cup seasoned bread crumbs
Procedure:
- Preheat oven to 350 degrees F (175 degrees C). Coat a 7×11 inch baking dish with nonstick cooking spray.
- Pound chicken breasts to 1/4 inch thickness.
- Sprinkle each piece of chicken on both sides with salt and pepper. Place 1 cheese slice and 1 ham slice on top of each breast. Roll up each breast, and secure with a toothpick. Place in baking dish, and sprinkle chicken evenly with bread crumbs.
- Bake for 30 to 35 minutes, or until chicken is no longer pink. Remove from oven, and place 1/2 cheese slice on top of each breast. Return to oven for 3 to 5 minutes, or until cheese has melted. Remove toothpicks, and serve immediately.
Chocolate Fondant (lava cake)
Ingredients:
* 10 oz (280 g) bittersweet chocolate (70% cocoa)
* 4/5 cup (180 g) butter
* 8 eggs
* 1¼ cup (275 g) sugar
* 1¼ cup (140 g) all-purpose flour
Procedure:
- Preheat oven to 350 deg F (Gas mark 4 or 180 deg C).
- Grease 10 large muffin tins or cups; paper muffin bake cups can also be used.
- Break the chocolate into small pieces and melt it with butter over hot water.
- Beat the eggs with sugar and mix with flour.
- Slowly fold in the melted butter and chocolate.
- Bake at 350 degrees for only 8-12 minutes; the outer part should be cooked and the inner part liquid.
